Smoked Salmon and Avo Sandwich

2 slices of low GI, wholewheat or rye bread topped with cottage cheese, rocket, avocado, and smoked salmon. can be served as a closed or open sandwich.

Ingredients

  • 50g smoked salmon
  • 2 slices low GI wholewheat/dumpy seed/rye bread
  • 2 Tablespoons plain cottage cheese
  • Handful of rocket
  • 1 medium gherkin, sliced
  • Half a small avocado – cut into cubes or sliced
  • Lemon – to squeeze for juice

Method

  1. Top both slices of bread with your cottage cheese, then your rocket, gherkins, and avocado. Top with your salmon and squeeze the juice of half a lemon over the top.
  2. Serve either as a closed or open sandwich.

Notes

Other ingredients that would go well include red onion, capers, tomato, and pickled onion.
